I spent a lot of time cooking and documenting my favorite meals during the winter. It gave me a chance to be more intentional with the food I was eating and brought a sense of excitement into the kitchen. I’ve always struggled a bit with being consistent in the kitchen and reminding myself what foods I enjoy the most. To curb the tendency to overthink these things (which leads to not cooking) I made a weekly menu on my fridge and gave myself an idea of what to cook each day. As I cooked each meal I focused on the gratitude I felt for being able to make my own meals and having the means to do so. Each of the following recipes turned into a staple for me during the winter months!
Food has always been something I enjoy, but my relationship with it has changed significantly as I get older and learn more about nutrition. No longer do I see eating as some passive act, it is a great time to bring meditation and present focus into the day. I found much comfort in the process of creating and documenting each of these meals. Each is flavorful, rich, and sure to leave your body feeling nourished!
